Protected Geographical Indication Parnassus
80% Chardonnay, 20% Assyrtiko
Central Greece. In the wine-growing area of Parnassos the international variety Chardonnay and the greek Assyrtiko are cultivated in the area of Leykes and Anamero respectively at an altitude of 400-450 meters. The microclimate of the area is characterized by heavy rainfall in winter and spring but summers by mild drought. Soil is loam clay with moderate slopes that give good drainage.
Vinification method & Maturation
After careful selection of grapes, follows directly pressing. Next is the alcoholic fermentation of the two varieties separately in stainless steel tanks in classified temperatures. An important point for the evolution of the blend is the "marriage" of two wines maturing in French oak barrels for four months, where throughout the course continues with regular Battonage stirring.
Golden yellow in colour , an elegant type of wine with ripe tropical fruit flavours , accompanied by a gentle touch of oak scent. It consists of a rich oily body with a pleasant sweet aftertaste.
It can be best combined with Mediterranean dishes of seafood or poultry and smoked cheese. Best served at 10-12º C.
