Central Greece. The grapes for the production of Merlot from the owned vineyard area, Koufeika of total area of 3 hectares at an altitude of 400-450. Loam clay soil with moderate slopes.
Vinification method & Maturation
After harvesting the grapes we follow careful destemming with absence of crushing then the juice is driven to the fermentation tank. In the middle of the fermentation the 50% of the grape juice is transferred to a separate tank and fermenting at high temperatures and the remaining 50% fermenting separately at lower temperatures of 20-22ºC in order to restrain the maximum aromatic potential diversity. After the end of the fermentation is followed malolactic fermentation in stainless steel tanks and the end of that is maturing in French oak barrels of 225 liters.
Terroir representative of the region, a fine wine with rich aromas of forest fruits, vanilla, coffee and wood due to its aging. Fruity aftertaste that lasts, with good acidity help create a balanced wine
It can accompany meat dishes with red sauces and it blends in a savory way with many types of cheese.Best served at 16-18ºC.
