Protected Geographical Indication Parnassus
Region / location
Central Greece. In the wine-growing area of Parnassos is cultivated the variety Mavroudi. The soil has loam clay texture, moderate slopes and southeastern orientation. The total area covers 4 hectares of vineyards in Livadorachi and Anamero and at an altitude of 400-450 meters.
Vinification method & maturation
After harvesting the grapes is followed the method of kryoekchylisis and the juice remains for about 10 hours in stainless steel tanks to achieve this particular light color of TANGO. The fermentation continues in graduated temperatures to bring out the maximum flavor potential variety Mavroudi. Maintenance of the wine for two months on the lees before bottling.
The main feature of of this special variety is the rich flavors of peach and rose. Lively acidity in the mouth gives a pleasant, refreshing wine.
It can provide the perfect accompaniment to pasta with lohght sauses, yellow cheese and fresh fruit. Best served at 8-10º C.
